Spicy Cashew Butter

This is a recipe that I found in IT'S ALL GOOD: Delicious, Easy Recipes That Will Make You Look Good and Feel Great by Gweneth Paltrow, and then modified a little to fit my tastes.  

It's a spicy, savory cashew butter that can be used with cut veggies, like a hummus, or as a topping or sauce on meet or veggies.  I love it on lettuce cups with ground turkey and avocados.  Yum!!

It's also super easy to make!

 

 

 

 

 

 

 

 

 

 

 

Saute the cashews and spices in about two tablespoons of olive oil until the cashews turn golden brown.  
While the cashews are cooking, seed and dice the jalapeno .

 

When the cashews are done, add them along with the remaining ingredients to your blender and blend until smooth.  

In the original recipe, it calls for a high speed blender like a Vitamix.  I blend the cashews in my little Cuisinart, and I've never had any problems.

Once the mixture has reached your desired consistency, scoop out into a bowl and enjoy.

I have no idea how long this will last in the refrigerator, because it just doesn't last very long in my house.
